Smoked Salmon and Sunchoke Salad
We've made this recipe before with yummy, yummy smoked trout from the farmers' market. It's one of our favorites from '
Asparagus to Zucchini.' This time we subbed in smoked salmon since farmers' markets are sadly over for the season. It wasn't as good, but still a decent dish and full of Omega-3's. We're working hard on making sure we get those in our diets.
