Eggplant and Carmelized Onion Pizza
Our first fresh herbs from the yard! I am so happy to learn that oregano is a perennial here in zone 4. These fresh additions made the pizza extra flavorful.
The oregano threatens to take over my herb planter here in zone 7. I cut and throw massive quantities of it away throughout the summer. I should probably try drying it.
