Grilled Burgers with Roasted Baby Beets and Chevre, with Baked Sweet Potato and Parsnip Ribbons
I used up a few of our baby beets along with parsnips and sweet potatoes last night for dinner. My favorite burger topping of all time is a combination of the sweet roasted beet slices and mountains of fresh chevre. Also, I tried the parsnip ribbons, along with some sweet potatoes, in the oven this time, instead of fried and they turned out quite well. And, the house did not smell like a fast food restaurant after dinner. Mmmm...root vegetables!
